How to Make Twice Baked Mashed Potatoes
- Peel potaoes, boil them, drain and mash. Add the butter, sour cream, cream cheese, salt and pepper. Add milk if the potatoes are still thick.
- Place in 9×13 buttered dish. Add Tablespoon of butter to the top and salt and pepper.
- Bake at 350 degrees for 30 minutes.
- To make them Loaded-Mashed Potatoes add cut up bacon, cheese, and chives

What kind of potatoes should I use?
Twice Baked Mashed Potatoes
This is my go-to twice baked mashed potatoes recipe. Its simple, easy, and delicious!
Ingredients
- 8 large potatoes (or about 15 small) peeled, boiled, drained
- 8 oz. sour cream
- 1 cube butter, plus a Tablespoon for later
- 8 oz. cream cheese
- salt
- pepper
Instructions
- Peel potatoes, boil them, drain and mash. Add the butter, sour cream, cream cheese, salt and pepper. Add milk if the potatoes are still thick.

Once you’ve peeled your potatoes, but them in a pot of boiling water until they are soft. It depends on how many you are boiling, but this will take about 15 minutes.
After they are done I strain the water and place the HOT potatoes in my Bosch! By the way, if you don’t have a Bosch, this is one of my favorite kitchen gadgets ever! It’s a must have for me, for sure!
Now for the good stuff! It’s time to add the butter, sour cream, cream cheese, salt, and pepper!
Not getting the right consistency? Add milk if it is too thick
Continue to mix until at the right consistency! You’ll know it’s right when small peaks start to form in your mixture. Remember, do not over mix them!! They will turn into a paste which is not the best texture for potatoes.
