Twice Baked Mashed Potatoes

Twice Baked Mashed Potatoes

This is my go-to twice baked mashed potatoes recipe. Its simple, easy, and delicious! I feel like mashed potatoes are a recipe that seems easy, but when you can make a mean mashed potatoes dish, it elevates the entire meal! My family loves these so much! Question — do you like potato skins in your mashed potatoes? I do like a few, but definitely more on the lighter side! Some people are very particular about skins in their mashed potatoes so feel free to adjust as you see fit!

  1. Peel potaoes, boil them, drain and mash. Add the butter, sour cream, cream cheese, salt and pepper. Add milk if the potatoes are still thick.
  2. Place in 9×13 buttered dish. Add Tablespoon of butter to the top and salt and pepper.

  4. To make them Loaded-Mashed Potatoes add cut up bacon, cheese, and chives

Ingredient for Twice Baked Mashed Potatoes

  • 8 large potatoes (or about 15 small) peeled, boiled, drained
  • 8 oz. sour cream
  • 1 cube butter, plus a Tablespoon for later
  • 8 oz. cream cheese
  • salt
  • pepper

What kind of potatoes should I use?

Ultimately, you can use any type of potato but it’s recommended that you choose either russet or yukon gold potatoes. They will be the most flavorful and also give the best texture! Texture is so important for mashed potatoes so this is not a consideration to skip!

First things first, peel your potatoes! A good potato peeler is SUCH a game changer! This one from Amazon is great. This will make the process of peeling your potato so much easier!

Once you’ve peeled your potatoes, but them in a pot of boiling water until they are soft. It depends on how many you are boiling, but this will take about 15 minutes.

After they are done I strain the water and place the HOT potatoes in my Bosch! By the way, if you don’t have a Bosch, this is one of my favorite kitchen gadgets ever! It’s a must have for me, for sure!

Now for the good stuff! It’s time to add the  butter, sour cream, cream cheese, salt, and pepper!

Not getting the right consistency? Add milk if it is too thick

Continue to mix until at the right consistency! You’ll know it’s right when small peaks start to form in your mixture. Remember, do not over mix them!! They will turn into a paste which is not the best texture for potatoes.

Once you’ve achieved your desired consistency, place potatoes in a buttered 9×13 dish. Add about a Tablespoon of butter on top with more salt and pepper!

Place the dish in the oven and bake at 350 degrees for 30 minutes!
