Havarti, Caramelized Onion, and Steak Quesadilla

Weekends are something to look forward to in our house. I love when my husband is home, but I think my kids love it even more! For some reason all my kids love being outside and helping him do yard work. I on the other hand can barely get them to put their dirty clothes in the hamper! I spend Saturday and Sunday cooking! Breakfast, lunch, and dinner and usually a snack and dessert too!

Last weekend we had a major cleaning day then spent the rest of the day out back. They were slip n’ sliding and playing with every water toy imaginable. And yes here in Arizona the water toys make their  debut again in February! After the water day I whipped up some fresh squeezed lemonade and these quesadillas. And they sure hit the spot!

Havarti, Caramelized Onion, and Steak Quesadilla

Ingredients

  • Thin cut steak, grilled and thinly sliced
  • 7 ounces Havarti Cheese
  • 1 Medium onion, thinly sliced
  • 2 Tablespoons butter
  • 1/4 cup of your favorite BBQ sauce
  • Pasta Sauce
  • Tortillas
  • Butter

Instructions

    1. In a pan add 2 Tablespoons of butter and then the thinly sliced onion. Sauté until the onions begin to caramelize.
    2. Once they become translucent add the cooked and sliced steak to the onions.
    3. Add the BBQ sauce and mix together.
    4. On a flat skillet add a little butter and then place a tortilla on it (I love to use the tortillas that you have to cook) on 1 side of the tortilla spread some pasta sauce on it then add the steak/onion mixture and then place 2 or 3 slices of havarti cheese on it. Fold it over.
    5. Once that side of the tortilla starts to lightly brown flip it. If the tortilla is starting to brown faster then the cheese is melting turn down the heat and let it cook slower.
