While I was at a blog conference I was talking to my sister and her blog partner about recipes that I had been trying out and brainstorming for my next recipe for Krusteaz.  I had been trying multiple recipes and just hadn’t found one yet that I just loved and that was good enough to be on their website. It had to be one of my best yet!
 
I wanted to know what type of recipes they are looking for in their home! Most moms are looking for easy dinners that the entire family can enjoy. It’s not ideal to make two dinners — one for adults, and one for kids! This recipe is perfect to make for everyone and nobody will be disappointed.

Why the Panera Flatbread

I wanted to make something a little different than the usual flatbread recipe because I feel like that is really simple to make. Mallory reminded me on the yummy BBQ chicken flatbread sandwich that Panera had and how much she loved it. I went home from that conference and went straight to my kitchen and began trying to create the perfect copycat recipe using Krusteaz flatbread mixes. And this recipe just hit the nail on the head, super yummy!
 
If you have never been to Panera and tried their flatbread sandwiches they are super delicious and perfect for lunch or dinner! My personal favorite is their BBQ chicken flatbread sandwich because all of the flavors fit together perfectly. Prepare them for your next meal and save some money. This recipe can easily be made at your home and doesn’t require a ridiculous amount of ingredients!

BBQ Chicken Flatbread Sandwich

BBQ Chicken Flatbread Sandwich

Ingredients

  • 1 box of Crusted Whole Wheat Flatbread Mix
  • 1 cup water + 2 Tablespoons very warm water (115-125 degrees F)
  • 1/4 cup vegetable oil
  • 1/2 smoked Rotisserie chicken, shredded
  • 1/2 cup BBQ sauce
  • 4 oz smoked Gouda cheese, sliced
  • 1/4 cup Mozzarella cheese, grated or sliced
  • 1/2 cup frizzled onion straws
  • 16-20 spinach leaves
  • a few sprigs of cilantro

Instructions

    1. Heat oven to 475°F. Lightly grease baking sheets.
    2. In medium size bowl, stir together flatbread mix and yeast (enclosed).
    3. Add warm water and oil, stirring until dough forms a ball. To activate yeast, cover dough and let rest 10-20 minutes, or until oven is hot.
    4. Shape dough by dividing into 8 portions. With floured hands, pat out dough 1/8 -1/4-inch thick, forming 8 circles with a 5.5 inch diameter.
    5. Bake 7-9 minutes or until edges are golden brown. Brush lightly with olive oil (optional).
    6. Spread BBQ sauce over flatbread.
    7. On half of the flatbread place a few pieces of chicken and then top the chicken with the smoked Gouda and mozzarella cheese.
    8. Add a small handful of the frizzled onion straws and top with a few pieces of spinach and cilantro.
    9. Fold in half to create the flatbread sandwich.

How to Make a Panera Flatbread – BBQ Chicken Flatbread Sandwich

Panera Flatbread Ingredients:

  • 1/2 smoked Rotisserie chicken, shredded
  • 1/2 cup BBQ sauce
  • 4 oz smoked Gouda cheese, sliced
  • 1/4 cup Mozzarella cheese, grated or sliced
  • 1/2 cup frizzled onion straws
  • 16-20 spinach leaves
  • a few sprigs of cilantro

Instructions

The flatbread takes a total of 25 minutes to make and about 15 minutes to prep.

For Flatbread:
  1. Heat oven to 475°F.
  2. Lightly grease baking sheets.
  3. In medium size bowl, stir together flatbread mix and yeast (enclosed).
  4. Add warm water and oil, stirring until dough forms a ball. To activate yeast, cover dough and let rest 10-20 minutes, or until oven is hot.
