I spend a lot of time cooking with my mom. She owns a catering company and also does gift baskets and different treats for professional offices around Arizona. I am her right hand person and I love it. One of the benefits to working along side my mom is that I get to spend a lot of time with her and her friends and neighbors that stop by through out the day! A few years back she had a neighbor named Kjersten that I absolutely love. She would come over and hang out with us while her kids were at school. We spent hours and hours together and by the time she moved I loved her just as much as my mom did!
 
When she was my moms neighbor it was at the same time that my mom was publishing her 2nd cookbook. She asked her close friends to contribute a few of their very favorite recipes to her book. And Kjersten gave this potato salad recipe! I couldn’t wait to try it! And it was just as perfect as I thought it would be!

Yummy, but Easy Potato Salad

Ingredients

  • 12 rose white potatoes, skinned then chopped, then cooked
  • 1/2 lb bacon
  • 3 Tablespoons grease (from the bacon)
  • 1 red onion, cubed
  • 1 Tablespoon mustard
  • 1 cup mayonnaise ( or more if you like a more of a wet potato salad)
  • 1/4 cup red wine vinegar
  • 1 cup sour cream
  • 8 hard boiled eggs, chopped

Instructions

    1. Prep and cook all the potatoes.
    2. Then cook the bacon. Drain the grease from the pan except for 3 Tablespoons. Take the bacon out and set aside.
    3. Then mix the mustard in the grease; add the onions and saute until onions are soft and begin to be translucent. Mix vinegar, mayo, and sour cream together and stir well.
    4. In a large bowl add the potatoes, the onion mixture and the mayonnaise mixture. Stir well.
    5. Chop the bacon and the hard boil eggs and then stir them all in.
    6. Add more mayonnaise if you would like. You can serve right away or you can let it sit in the fridge for an hour or two before.
    7. Top with more bacon or hard boiled eggs if you would like!
