Summer Time Spinach Salad with a Creamy Citrus Poppyseed Dressing

It gets hot here in Arizona during the summertime! I am always looking for refreshing lunch and dinners to enjoy that don’t heat up the house! This salad paired with bowtie pasta takes it up a notch and makes it a little heartier. Which means you can enjoy it for dinner as well as lunch!

 

 
I always love using Stonyfield Greek yogurt to create a creamy dressing to pair my salad with! I love using these 5.3 ounce containers because they are perfectly measured with the right amount of Greek yogurt to make a dressing for my family! 
 

There is some yummy salad dressings from The Cookful. Ever since I got pregnant last year I am been blue cheese obsessed! Mostly with a wedge salad. I can’t wait to make this Blue Cheese Dressing from The Cookful! Are you kidding me YUM!

So here is how you make the dressing! Grab a jar and squeeze in the lemon and lime juice

 
Pour in the honey

 

 
Grab the Stonyfield Greek yogurt

 

 
Pour it in the jar and then pour in the olive oil

 

 
Then dump in the poppy seeds

 

 

 

Shake it up!
 
Taste and add salt and pepper if you would like
 
 
Creamy Citrus Poppyseed Dressing
 

Summer Time Spinach Salad with a Creamy Citrus Poppyseed Dressing

Ingredients

  • 1 5.3 ounce container Stonyfield Plain Greek Yogurt
  • 2 Tablespoons freshly squeed lemon juice
  • 2 Tablespoons freshly squeezed lime juice
  • 2 Tablespoons honey
  • 2 Tablespoons olive oil
  • 1 Tablespoon poppyseed
  • salt and pepper

Instructions

  1. Combine all ingredients in a bottle or jar and shake well. Whisk with a small whisk if you need to! Add salt and pepper to taste!

Summertime Spinach Salad
 
Spinach
Bowtie pasta- cooked according to directions on back of package
Strawberries, sliced
Blackberries
Blueberries
Avocado, cubed
Monterey Jack Cheese, grated
Sliced almonds
 
Place large handfuls of spinach down. Add as much pasta as you would like. Then top with strawberries, blackberries, blueberries, avocado, monterey jack cheese, and sliced almonds.
