Strawberry Tarts

 


I am a huge tart lover. Like if anyone was to ever bring me my favorite treat it would be tarts. I love tarts filled with pink lemonade filling, an assortment or fruit (kiwi is probably my fav in there) and these strawberry tarts. There are a little bit of a labor of love. Like sugar cookies…In my opinion. And of course those are my husband and my favorite things! I am not sure if that means that we are high matinance or just have good taste haha. But let me promise you that these tarts and the pink lemonade ones are worth every second! 



Strawberry Tarts

Shell:
1 cup shortening
1 cup sugar
2 1/2 cups flour
1 egg
1 teaspoon almond extract

Cream sugar and shortening. Add flour, egg and extract. Spread as thin as possible into individual tart pans. Place on a cookie sheet. Bake at 375 degrees for 12 to 15 minutes, or until light brown or the shine is all gone from the dough. (DO NOT OVERBAKE) Let cool for a few minutes before removing. Then tap gently and squeeze the sides of the tart pans gently until they come out. 

 



Strawberry Glaze
1/2 cup sugar
1 1/2 cups water
1 small box strawberry Jell-O
2 Tablespoons corn starch
Strawberries,washed, tops cut off and thinly sliced

Bring sugar, water, and cornstarch to a boil and cook until it turns clear. Take off from the stove and stir in strawberry Jell-O. Let cool; add fresh strawberries. Spoon into cooked tarts.
