EASY and FUN Rainbow Cake in a Jar

With my daughters Unicorn party coming up I knew that I wanted to do something different then cupcakes. I wanted to come up with something that would look just as cute as it tastes and that it would be a little different then normal.

So I looked and found some rainbow in a jar recipes that were all over Pinterest. Some you cut and scoop after you bake and others you bake right in the jar! With the party chaos happening and the actual party only starting in a few hours I whipped up these rainbow cake in a jar and let them cool for an hour and then topped then with frosting and cupcake toppers from Party Parcels and they were a huge hit at the party!

And bonus was they were super easy to make!

 

Rainbow Cake In A Jar

Ingredients

2 white cake mixes+ (the right amount of water, eggs, and vegetable oil on the back of the box) x2
food coloring (this is the kind that I used) (purple, blue, yellow, pink)
14 (8 ounce) mason jars
Frosting:
1/2 cup butter, softened
8 ounces cream cheese, softened
1 lb powdered sugar
1 teaspoon vanilla

milk if necessary

Instructions

Make the white cake mixes according to the directions on the back with the correct amount of water, vegetable oil and eggs. Mix well. Add 1/2 cup of the batter in 4 different bowls. (If there is any remaining batter equally add it into each bowl. Take a toothpick and add a dot of 1 of the colors into a bowl of batter. Mix it together and add more food coloring depending on how bright you want your cols to be. Move onto the next color and repeat the steps until all 4 colors are completed.
Then grab the jars and add a generous amount of non stick spray. Then take a cookie scoop and starting with purple add a scoop of the batter to the jar. In the end you are going to want the jar to be filled half way full. So divide the bottom half of the jar into fourths and add each color the right amount.
Fill the jar with all the colors I started with purple then blue then yellow and the topped with pink!
Grab a 9×13 baking dish and place the jars in them not touching and bake at 350 degrees and bake the 8 ounce jars for 25 minutes. Check with a toothpick. And take out when toothpick comes out clean. (if you are using bigger normal size mason jars bake for 35 minutes)

  5. Let cool for 1 hour and then make frosting by mixing all ingredients together and then frost the top of the cakes. If the cake rising above the jar cut off the top to create a flat place for the frosting to go. Top with sprinkles and a cupcake topper!
