Easy and Fun Breakfast in Bed

Birthdays are a big deal in our home. I was raised by a mom who loved birthdays and holidays and ever since my kids were very little I have made holidays, even the smallest ones, fun to celebrate! One tradition of ours is serving a large stack of funfetti pancakes on birthdays. I wanted to share with you all this special recipe and hopefully it becomes a tradition in your own home!

To make things even better I love serving it in a breakfast in bed style! If I can get my kids to stay in their bed long enough for me to serve them they love it! My kids have been in heaven with their new bedding from Beddy’s. My sister introduced Beddy’s to me and I have been in complete awe of how amazing they really are! I have told countless neighbors and friends about how perfect they are for their home. Especially in this situation by boys have bunk beds! I always nag my boys about making their beds and my son on the top could not for the life of him figure out how to make his bed! Now with it has honestly been life changing for him. I no longer have to nag him. He knows he needs to make his bed each morning and he honestly doesn’t mind it anymore. No more hassle or frustration for him. And better yet I get to enjoy his neatly made bed!

Anyways I couldn’t wait to share a few of my favorite things with you! Funfetti pancakes, breakfast in bed, and my new favorite bedding!


Funfetti Pancakes

3 eggs
1/3 cup oil
2 1/3 cups milk
1 Box funfetti cake mix
1 1/3 cups flour
2 teaspoons baking powder
2 Tablespoons sugar
1/2 teaspoon salt

In a bowl combined eggs, oil and milk with a whisk. Slowly add flour,baking powder, sugar and salt. Whisk together. Add the cake mix.


Heat up a skillet to medium heat. Spray with cooking spray. Grab a ice cream scooper (best way to create a perfect circle pancake) scoop up some of the batter and ladle it on to the skillet. Grab some sprinkles and sprinkle a little on to the top of the pancake. Cook for about 1 to 2 minutes or until it begins to bubble and then flip! Butter the top and cook for an additional minute and then place on a wire rack. Complete steps until batter is finished! Then top with your favorite syrup! Our families is buttermilk syrup!

Dont forgot to stack those pancakes high! Put in some candles and sing happy birthday to your special Birthday boy or girl!
