EASY Slow Cooker Mashed Potatoes

Slow Cooker mashed potatoes is game changing! One of my sons best friends told his mom that this recipe has been the best thing that has happened to their dinner menu! haha! My son’s favorite food is mashed potatoes. I used to loathe mashed potatoes. Maybe it was the fact that one of my childhood kitchen memories was shucking corn and peeling potatoes on Sunday for my mom. But I honestly prefer twice baked potatoes over mashed potatoes. Which ultimately are twice as hard as these hence their name.
But ever since I started making mashed potatoes this way we have had them way more often which means by oldest son is even more happy come dinner time! I hope this recipe is as life changing to your dinner menu as it has been for our family and my friends!
Slow Cooker Mashed Potatoes
5 lb bag of red or yellow potatoes (not russet, those need to be peeled but can be done the same way as these after you peel them)
1/2 cup butter
1 cup sour cream
8 ounces cream cheese
Grab your potatoes and cut them in half. Then grab your crockpot and place the potatoes right in there. Thats it! Turn it on low for 6-8 hours.
Once the time is up and the potatoes are soft grab your butter, cream cheese and sour cream and toss in. Then take your hand mixer and smash potatoes down a little then give it a mix. Don’t over-mix or the potatoes will become gummy. Season with salt and pepper, more butter if you would like and serve!
