My older 3 have been crazy busy with after school activities and sports. I know it will calm down during summer but in Spring all the activities and school programs are in full swing.

I have tried many “shredded meat” crockpot recipes. Whether is is BBQ meat, ranch, teriyaki, curry, etc there is a million versions out there! And trust me I have tried way too many of them! And a lot of them are OK. But just OK. It is hard to take it up a notch sometimes when it comes to the crockpot. But I have definitely been trying to lately. Most of the time it just takes a few more ingredients and only a few minutes and it was take it up way way more!

Hence this recipe. I have made similar taco recipes where I put in a pork roast and throw some sauce on top of it. Actually I have poured this exact Trader Joes sauce on a pork roast and made it. And it was good. But by adding a few more ingredients in the crockpot and using the same ones for a salsa it honestly made restaurant quality tacos! Where the meat has different dimensions and flavors and it just knocks it out of the park! And thankfully this recipe just happened to be just that!
