Stuffed Shells w/ Sausage and Sun-Dried Tomatoes

Stuffed shells are AMAZING and definitely a recipe I need to make more often. These delicious pasta shells are always a hit and I like to stuff them with sausage and sun-dried tomatoes!

Stuffed Shells..they are definitely a pasta I don’t make often. Usually pasta dishes are on those nights when I forgot what I had planned for dinner and I throw in some pasta to boil while I figure out a sauce to go with them!
 
But the other day I woke up and knew it was going to be a crazy busy day. So I made dinner at 8 am. Yup..it happens often at my house! Having dinner prepped and ready to go in the morning right after breakfast allows me to check it off my list and also it allows me to just have my kitchen messy once that day! Then I do all the breakfast and dinner dishes all at once! Start the washer and then I am good to go for the rest of the day!
 
 
So since I decided to make them in the morning these stuffed shells were the perfect thing to make ahead of time and pop in the oven right before dinner. And actually usually in these situations I have my husband of oldest son help by preheating the oven and putting them in!
 

Sausage and Sun-Dried Tomato Stuffed Shells

Stuffed Shells w/ Sausage and Tomatoes

Ingredients

  • 1 lb Italian sausage
  • 1 small onion, diced
  • 1 box Jumbo shell pasta, cooked
  • 1 cup sun dried tomatoes
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 2 teaspoons garlic salt
  • 1/3 cup parmesan cheese, and more for later to sprinkle on top
  • 24 ounces marinara sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. In a skillet cook the Italian sausage. Then add the onions and cook for a few minutes. Then add the sun-dried tomatoes. If you are trying to "hide them" from your kids chop them up if not slice into thin strips before adding. Then set aside.
  3. In a bowl add the ricotta, mozzarella cheese, egg whisked, seasonings and the parmesan cheese. Mix together well.
  4. In a 9x13 or (2) 9x9 pans add the marinara sauce. Then place the cooked jumbo shell pasta with the top open so that you can stuff them. Then take the cheese mixture and stuff each shell. Repeat until all the cheese filling is gone and the shells are all stuffed.
  5. Then sprinkle the sausage and sun dried tomatoes on top. Finally top with parmesan and/or more mozzarella cheese if you would like.
  6. Bake for 25-30 minutes covered. Then serve!
