Have you ever had breakfast hash? Bacon is my secret ingredient and when it is all cooked together in a skillet this recipe comes out AMAZING! It is always a huge hit for breakfast in my family and it is super easy to make for the whole family. With eggs and potatoes mixed in, this recipe becomes the perfect meal to make for a full breakfast and will get you started to have a great day. Try it out the next time you want to make a yummy breakfast hash!
How to Make Bacon Hash at Home
- In a cast iron skillet begin to cook the bacon.
- In a separate cast iron skillet drizzle down some oil. Add the potatoes and begin to cook!
- Once the potatoes are done add the bacon by crumbling it on top.
- Next, create little grab a spoon and you are going to create little pockets or holes in the potatoes so that you can crack the eggs inside!
- Crack an egg in each pocket!
- Sprinkle the cheese on the potato and bacon sections while the eggs cook.

- 16 oz frozen potato cubes
- 1/2 lb bacon
- oil (olive or vegetable)
- 4-6 eggs
- 1/4-1/2 cup mozzarella cheese
- season salt
- pepper
Instructions
- In a cast iron skillet begin to cook the bacon.
- In a separate cast iron skillet drizzle down some oil. Then add the potatoes and begin to cook!
- Then once the potatoes are done add the bacon by crumbling it on top.
- Then create little grab a spoon and you are going to create little pockets or holes in the potatoes so that you can crack the eggs inside!
- Then crack an egg in each pocket!
- Sprinkle the cheese on the potato and bacon sections while the eggs cook.

- In a separate cast iron skillet drizzle down some oil. Add the potatoes and begin to cook! You will cook them for about 20 minutes. Drizzle more oil as needed for the potatoes to get a crispy outside. (I usually add the bacon grease as well) You can also cover the potatoes with a lid to speed up the cooking process. Check on the potatoes every few minutes and stir and flip them. Season well with season salt.
- Once the potatoes are done add the bacon by crumbling it on top.
- Create little grab a spoon and you are going to create little pockets or holes in the potatoes so that you can crack the eggs inside!
- Next, crack an egg in each pocket!
- Sprinkle the cheese on the potato and bacon sections while the eggs cook.
- If you want the yolks cooked you can cover it with a lid or if you need to speed up the process. Or just be patient and let the egg whites cook! Season the eggs with pepper and then serve!
