Pork Chili Verde and my favorite Rice

This recipe is so versatile. You can serve it over rice or as a burrito bowl. Or use the chicken for tacos, enchiladas, burritos, or really anything you want. The meat is just so yummy you can even eat it plain. I have done that too! But for today I will be sharing my go-to rice recipe side by side with this yummy pork chili verde! Rice 4 cups water 1 1/2 Tablespoons chicken bouillon 2 Tablespoons dry parsley 2 Tablespoons dried onion 1/2 cube butter 2 cups uncooked rice Bring all to a boil and then add the 2 …

Sonoran Style Enchiladas

At the start to each New Year a lot of people set different types of goals. I personally love goal setting and achieving! I know I get a lot of people asking me how I meal plan so that when dinner time comes around it is a more enjoyable time and not a chaotic race to get something on the table with their family starving around them as they are trying to cook. Each week I set a menu of the things that I will be cooking that week. That menu has everything from main dishes to sides and desserts. …

Cuban Black Beans

My oldest son, who is now 6, has always loved black beans ever since he was a baby! He will not eat pinto or pork in beans. He just loves black beans. Whenever I make them he always asks for a big plate of them and nothing else. Then he goes back for seconds! These beans were no exception. They are very very easy and have a lot of flavor. You can spice these up by adding more cayenne pepper or if you need them family friendly try just a pinch of cayenne pepper to give them flavor! Cuban Black …

Copycat Rubios Fish Tacos

I absolutely love Rubio’s fish tacos! I rarely buy cabbage. But the other day my son requested orange chicken and chow mien (recipe to come soon!) and so I had some left over cabbage so I threw this easy weeknight meal together and it was an absolute hit in our home! You can make this easy like I did and use my sons favorite Costco fish sticks chopped up or you can make some of your own breaded fish for the tacos. I feel like the sauce is the star in the recipe!  Copycat Rubios Fish Tacos Corn Tortillas (10) …

The BEST Fajitas

If someone asked me what are the top 5 meals that I make most for my family this recipe would be one of them! Whenever I am at the store and don’t have my shopping list with me I always seem to go back to this recipe. Its simple, I know the recipe by heart, and its always a winner! I will admit that I usually make chicken fajitas more then steak fajitas. But this particular day I had steak left over from the night before and I was taking pictures of some salsas I was also making for dinner …

Crockpot Southwest Chicken Nachos

Many people LOOOOVE using their crockpot. And I will admit that some days I love using my crockpot too. But for some reason almost every single crockpot recipe I try comes out looking not so good. Most of them taste good, but before I put the meal on my table I usually have to explain to my husband that this is “a crockpot meal”…they are easy and delicious but not always so pretty! I received a fun package from Citizen Chef with a few of their sauces. I have the perfect recipe for their Pan Asian Orange Sauce that I will be posting soon …

Cheesy Sour Cream Chicken Enchiladas

I feel like I have tried 100 different recipes for enchiladas. Some I really like and some not so much. This one turned out to be different then most recipes I have tried. The good thing about these ones is that they actually do not take enchilada sauce. The ingredients in these are ingredients that I usually have right in my fridge. I have left over chicken from my Crockpot Rotisserie Chicken so I decided to give this recipe a try! They were very cheesy and creamy! Not spicy at all. They are very kid friendly unlike some of the other enchilada …
