BBQ Chicken Chile Quesadilla

These cheese chicken quesadillas are definitely a crowd favorite. They are filled with cheese, chicken, BBQ sauce, and green chiles.

 
Whenever I am in a rush for dinner and need something quick this recipe is where I turn! I usually have leftover shredded chicken in the fridge for days just like this
 

Yum! That is all I can say! This is the perfect week-night dinner. It is something different then the regular ol’ quesadillas. They are family friendly, but can also be spiced up for the men out there! These were a hit for my 5 year old and my husband!

Jazzed up quesadilla

 
Quesadillas don’t have to be boring. Jazz them up by adding this bbq chicken and green chiles to take this to a whole new level.
 
These can also be eaten and served as an appetizer.
 

Want to add veggies to your quesadilla?

 
Go ahead! Add some diced up bell peppers or jalapeños, top with diced tomatoes or avocados
 

How to make chicken quesadillas

Ingredients; you will need tortillas, chicken, bbq sauce, green chilies, and shredded cheese
 
Dipping sauce; you can dip these quesadillas in sour cream or more BBQ sauce
 
Layering; start by add the cheese, chicken, bbq sauce, and green chilies.
 
Microwaving; you can heat them in the microwave for 20 seconds
 
Stove top; Lay down the tortillas fill and fold, then flip and cook until lightly brown on each side
 
 

BBQ Chicken Chile Quesadilla

ingredients


3 large chicken breasts (or 4 cups shredded chicken)
2/3 cup favorite BBQ sauce
1/2-1 full can of a 4 oz can diced green chiles (this is a kid friendly amount-add more if you like it spicy) 
7 oz bag of shredded cheese (mexican cheese, I sometimes mix mexican and mozzarella)
4 large tortillas
sour cream

These cheese chicken quesadillas are definitely a crowd favorite. They are filled with cheese, chicken, BBQ sauce, and green chiles.
Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 3 large chicken breasts (or 4 cups shredded chicken)
  • 2/3 cup favorite BBQ sauce
  • 1/2-1 full can of a 4 oz can diced green chiles (this is a kid friendly amount-add more if you like it spicy) 
  • 7 oz bag of shredded cheese (mexican cheese, I sometimes mix mexican and mozzarella)
  • 4 large tortillas
  • sour cream

Instructions

  1. Take chicken breast and place on grill and grill until cooked all the way through.
  2. Slice and shred chicken. Or you can use your already shredded chicken.
  3. Grab a skillet and place chicken, green chiles, and BBQ sauce. Heat all the way through while mixing together.
  4. Grab tortillas and place on a sprayed griddle or in a sprayed skillet. To half of the tortilla...Add 1 handful of cheese.
  5. Let melt halfway through then add chicken mixture.
  6. Sprinkle a little more cheese on top and spread more BBQ sauce on if you are a BBQ lover.
  7. Fold over tortilla and wait until the cheese is all the way melted. Remove from griddle or skillet.
  8. Cut half or in fourths. We like to dip ours in sour cream. I even dip mine in a little BBQ too! Enjoy!
