Chinese Pineapple Chicken!

You can make yummy and easy Chinese pineapple chicken from home – this is a must try recipe!

 
 
My family loves Chinese food! We only have it a few times a month but when we do they all have multiple servings and clear their plates! One of our family favorites is the Sweet and Sour Chicken which is one of the most popular recipes on the blog. This is a rendition for this recipe with a different sauce and add ins. I even did a youtube video showing the how to make the chicken breading.
 

 

Chinese Pineapple Chicken

Chinese Pineapple Chicken Breading:

3-5 chicken breast
salt and pepper
1 cup cornstarch
eggs, beaten
1/3 cup canola oil

Sauce:

  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken stock
  • 1/3 cup hoisin sauce
  • 1/2 cup brown sugar
  • 1 clove of garlic minced
  • Mix-Ins:
    • 1 cup pineapple, diced
    • 1/2 cup roasted, salted cashews

Rice:

Whisk sauce ingredients in a sauce pan over medium heat until smooth. Then pour evenly over chicken, pineapple, and cashews.

Instructions for Chinese Pineapple Chicken

  1. Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper.
  2. Dip chicken into cornstarch (the easiest way is by putting the cornstarch in a ziplock and shaking the chicken in it to get it fully coated) and then into beaten eggs.
  3. Heat oil in large skillet. Cook chicken until browned. Don’t overcrowd the chicken.
  4. Once chicken is cooked place in a baking dish or plate.
  5. Repeat steps until all chicken is cooked. T
  6. hen drain the oil from the pan and add the chicken back into the skillet.
  7. Mix up sauce below.
  8. Once sauce is done pour over chicken and add the diced pineapple and cashews. Cook for a minute in the skillet over medium heat or two until combined and sauce fully coats everything. Serve over sticky rice.
