Chicken Chalupas

 

My kids love making and eatings these chalupas with me. We normally make enchiladas with corn tortillas so these are a little different since they are made with flour tortillas! They are a crowd favorite and can be easily doubled or tripled to feed a crowd!

 

6-8 chicken breasts, boiled and diced or shredded

8 ounces cream cheese

1 2.25 oz small can diced black olives

1 10.5 oz can cream of chicken soup

1 4 oz small diced green chiles

1 dozen flour tortillas

shredded cheese

 

Boil and dice the chicken and set aside. In a saucepan heat the cream of chicken soup, cream cheese, green chilies, and black olives. When heated completely add cooked chicken. Fill the small tortillas with chicken mixture and add grated cheese. Roll and place in pan. Continue to fill pan. Leave enough chicken mixture to spread over top. Sprinkle with cheese and bake at 350 degrees for 20-25 minutes.
