Looking to hop on the bruschetta trend? Try out this healthier version where you can cut out those extra carbs. Bruschetta chicken is super easy to make and only takes a few minutes! Just cook your chicken breast and then top with your favorite bruschetta toppings. In this particular recipe, having it caprese style is my go-to. Drizzle with balsamic glaze and it comes out perfect! Try this out!
How to Make Bruschetta Chicken
Bruschetta Chicken
Ingredients
- 1 tbsp. extra-virgin olive oil, divided
- 4 boneless skinless chicken breast, sliced in half to make thinner chicken
- 1 T dried oregano
- 1 T. garlic powder
- salt
- pepper
Instructions
- In a large skillet over medium heat, heat oil.
- Then grab the chicken and season it with oregano, garlic powder, salt, and pepper. Place chicken to skillet and cook 8 minutes on each side.
- Then grab a bowl and add the diced tomatoes, olive oil, minced garlic, and basil and season generously with salt and pepper. Then stir.
- Top chicken with bruschetta topping and Parmesan.
- Then drizzle with balsamic glaze. I like to serve with garlic bread and top the garlic bread with the leftover toppings!

- 3 tomatoes, chopped

- 1/4 c. Chopped Basil
- Shaved Parmesan
- Balsamic glaze to drizzle
