How fun and festive are gingerbread waffles?! I feel like every family is either a pancake or a waffle family. Well, in my house, we are honestly BOTH! I have a waffle maker that I just adore and whip it out every chance I get! My kids love to make waffles with me and to bring a little magic into our house for the upcoming holidays, I thought I would try something new and fun!
Gingerbread to me is that spicy, warm flavor that compliments syrup sooo well which is why I knew this combination would be perfect! Topped with whipped cream and some festive sprinkles?! It’s like a winter wonderland on your plate! There is nothing I love more than a festive breakfast!

Ingredients for Gingerbread Waffles
- 3 cups flour
- 4 t baking powder
- 2 t cinnamon
- 2 t ginger
- ½ t nutmeg
- ½ cup molasses
- ½ cup butter, melted
- 4 eggs
- 2/3 cup dark brown sugar
- 1 cup canned pumpkin puree
- 1 ¼ cups milk
- ½ t salt
Directions for Gingerbread Waffles
- In a large bowl add the dry ingredients. In a separate bowl add the eggs and brown sugar and beat until fluffy.
- Then beat in the pumpkin, milk, molasses and melted butter. Then gradually add the dry ingredients.
- Heat up your waffle iron and make those waffles
