Want to make authentic red chili burritos right at home? Here is how I do it! I love to make Mexican food at home because it is so versatile. I can make this crockpot red chili and use it so many different ways the rest of the week. Also, you know I love a good crock pot recipe! I always try to prep dinner first thing so that I can tackle the rest of my day.
How to make Crockpot Red Chili Burrito
- In a crockpot add the beef and pork roast, onions, garlic and salt and pepper.
- Cook on HIGH for 7 hours. Then shred the meat (if you have any fat or bones from the roast remove it).
- Then add the remaining ingredients (except the tortillas, cheese and sour cream) and mix all together.
- Then serve in the tortillas with the cheese and sour cream.

- 3 1/2-4 lb beef roast
- 2 to 3 lb pork roast (not chops with bones; big bone is ok)
- 1 large onion, diced
- 2 cloves of garlic, minced
- Salt and Pepper
- 1 large can diced green chilies
- 1 10 oz can cream of chicken soup
- 28 oz can Medium or Hot red enchilada sauce
- 1 (30 ounce) can refried beans
- Tortillas
- Cheese, shredded
- Sour Cream
