Preheat oven to 400 degrees F. Prepare the potatoes to be cut into fries by cutting off the ends of the potatoes and then cutting into even strips. Here is a handy tutorial video that I watched to learn how to best cut the potatoes into fries.
In a large bowl place the olive oil and spices. Whisk together. Toss in cut potatoes gradually while mixing until all potatoes are coated in the olive oil mixture.
Place on a baking sheet in a single layer and bake for 40 minutes. Keep an eye on the potatoes and depending on how thick or thin you cook them will depend on the baking time!
*I did not flip mine half way through like I sometimes do while baking fries so if you feel like yours need it then you can flip them or turn the oven onto broil the last 5 minutes to crisp them up*
