Hot & Spicy Jalapeño Spinach Dip

Ingredients

  • 1 box frozen spinach chopped, thawed and squeezed out
  • 1 medium onion chopped
  • 1 Tbsp red wine vinegar
  • 1 cup half and half
  • 4 ounce can jalapenos chopped
  • 8 ounce cream cheese softened
  • 2 cups monterey jack cheese shredded
  • 2 roma tomatoes diced
  • salt and pepper

Instructions

  1. Preheat oven to 400 degrees F. Combine cream cheese and half & half and mix until smooth. Add the red wine vinegar. Stir in the rest of the ingredients, and pour into a round casserole dish or a 9×9 pan. Bake for 25-30 minutes uncovered. Serve with tortilla chips.
