Breakfast Burritos

Ingredients

  • tortillas
  • potatoes
  • frozen onions
  • eggs
  • Trader Joes 21 salute seasoning
  • a little milk or cream
  • seasoning salt
  • vegetable oil
  • toppings for your burrito

Instructions

  1. Pierce the potatoes with a fork a few times and then pop in the microwave on the baked potato setting and cook for ALMOST the whole time. You want to remove from when they are soft but not too soft.

    Then take the potatoes out of the microwave and let cool for 1 minute.

    Take the eggs and break them into a bowl. Then add some milk or cream or half and half to the eggs and whisk them together. Add your favorite seasoning. (If I am doing 8 eggs I will do 1/4 cup cream and 1 1/2 tsp seasoning)

    Then take the potatoes and cut them into small squares. I leave the skins on to crisp up. Then pour some oil into one pan. Just a drizzle on the entire bottom. Then pop the potatoes in and give them a little fry on all the edges.  I also like to add some frozen onions and cook them together. This is totally optional though. Season them. Add more oil if you need to fry them more. The potatoes like to soak up the oil.

    In the other pan cook up the scrambled eggs. Top with cheese and you can add meat, veggies, etc.

    Assemble the burritos by laying down a tortilla and adding the potatoes, eggs, and toppings. Wrap up and serve.

    If you have leftovers wrap them in siran wrap and keep them in the fridge. Then microwave for 30 seconds at a time to heat back up!
