Mexican Chopped Salad

Ingredients

  • Romaine lettuce chopped
  • avocado sliced
  • jack cheese shredded
  • tomatoes
  • 1 15 oz can of fire roasted corn drained and rinsed
  • 1 15 oz can of black beans drained and rinsed
  • red onion diced
  • crunchy tortilla strips

Dressing

  • 1 packet ranch dressing, tradtional not buttermilk
  • 1 cup buttermilk
  • 1 cup mayonaise
  • 2 tomatillos husked and diced
  • 1/2 bunch cilantro
  • 1 lime juiced
  • 1 clove of garlic minced
  • 1 jalepano de-seeded

Instructions

Salad

  1. Lay down a bed of lettuce and top with remaining toppings then top with dressing.

Dressing

  1. Place all ingredients in a blender then pulse until smooth.
