What is White Chicken Chili?
White chicken chili is similar in texture to a traditional chili. The main difference is that instead of kidney beans or black beans, you’ll use white beans and sour cream to give it a cream base! I also add chicken because I love a protein element, but it is optional if you don’t eat meat or enjoy chicken.
It makes a GREAT freezer meal!
About a month ago a couple of girls and I did a freezer meal swap. One of the girls brought this soup. We aren’t big soup people in my house. Well…lets just say the husband isn’t a big soup person. But I popped this in the crockpot to thaw out all day and ate it for dinner. My husband said “wow this soup is so good is it homemade?” I told him yes but just left it there. I wanted him to think that I made it myself! Later that night I felt guilty that I had pretended like I made it and told him it was one of the freezer meals.
If you make extra, put it in a ziploc bag and spread it out evenly. Lay flat to freeze! Once it is completely frozen, you can put it vertically in your freezer to save space!
How to Reheat Frozen White Chicken Chili
Reheating this meal is as easy as making it! Just thaw it out enough to put in a crockpot or the stove. Heat until it reaches your desired temperature!

This recipe is easy and delicious and is best topped with cheese and sour cream in my opinion. And of course we serve it with cornbread. Because what is chili without a side of cornbread!

Ingredients:
- 4 (14.5 oz) cans white beans,drained
- 2 (14.5 oz) cans of white corn,drained
- 3 cups chicken broth
- 2 (4 oz) can diced green chilies
- 2 chicken bouillon cubes
- 2 medium onions chopped
- 1 Tablespoon garlic powder
- 1 Tablespoon oregano
- 1 Tablespoon cumin
- 1/2 teaspoon cayenne
- 4 cups shredded chicken breasts
- 1 24 ounce sour cream
Instructions:
Combine broth and cubes. Add all spices. Simmer for a few minutes. Add green chilis, corn, chicken, beans, and onions. Cook for 15 minutes. Add sour cream and stir. Cook for another 5 minutes.

My super picky kid who doesn’t like to try new things unless it is her idea loved this! We 1/2 the recipe and still made tons. She even told me we can have this for leftovers vs pizza night!

My 5 year old at so much of this I couldn’t believe it. I went back for seconds and wished I hadn’t cut the recipe in half for my small family.
