Coconut Shrimp Recipe

Easy coconut shrimp right at home.  This recipe is absolutely amazing!

While we were in Hawaii my son Remington ate coconut shrimp 2 meals a day!!! He was my pickiest eater and then we went to Hawaii and he not only tried shrimp but he loved it and ate shrimp over and over again!

This coconut shrimp recipe is a like a Hawaiin vacation! With pineapple juice and coconut, my whole family LOVES this recipe! SEE INGREDIENTS!

Easy coconut shrimp recipe

 

How to make coconut shrimp at home:

  1. Cut shrimp in half long ways. In a small bowl combine the egg and pineapple juice. Whisk together and then gradually add the flour. Continue whisking until smooth.
  2. Pour about 1 inch of oil into the bottom of a heavy bottomed skillet. Then heat the oil to 375 degrees.
  3. Place the coconut in a shallow dish. Dip the shrimp into the batter and then coat with the coconut. Then fry for about 4 minutes on each side or until golden brown.
  4. Then place on a paper towel to drain off the access oil. Then repeat until the shrimp are all gone.
