Strawberry, Watermelon and Arugula Salad

I had some leftover watermelon that was on its way out and if you know me – I don’t let anything go to waste! I added watermelon to one of my favorite salads to make this watermelon arugula salad and it was the best salad I’ve had in awhile! It is refreshing and so, so delicious! This watermelon and arugula salad recipe has a tangy balsamic that is AMAZING with the watermelon. If you’re headed to a BBQ or just need a side for dinner tonight, I highly recommend giving this a try! Do you like fruit in your salad like my family does?

Strawberry, Watermelon and Arugula Salad


  • 8 cups arugula/spinach blend
  • 3 cups seedless watermelon, formed into small circles using a melon baller or cut into small squares
  • 3 cups strawberries, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup goat cheese, crumbled
  • 4 oz pistachio nuts, shelled


  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 t honey
  • 1 T minced garlic
  • 1 t dried minced onion
  • 1 t dijon mustard
  • salt and pepper
  • instructions


in a large bowl combine salad ingredients and then toss with dressing


whisk ingredients together and then serve
