How to Make Sweet Potato Ground Beef Street Corn Bowls
Step 1: Roast the Sweet Potatoes
Preheat your oven to 425°F. Peel and dice the sweet potatoes into bite-sized cubes. Toss them with olive oil, taco seasoning, salt, and pepper.
Spread them in a single layer on a baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
Step 2: Cook the Ground Beef
While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef and diced onion, if using, and cook until the beef is browned and cooked through.
Drain any excess grease if needed. Add the taco seasoning and water, then simmer for 2–3 minutes until the beef is well coated and flavorful.
Step 3: Make the Street Corn
Melt the butter in a skillet over medium-high heat. Add the corn and cook for 5–7 minutes, stirring occasionally, until it develops some golden, charred spots.
Remove the skillet from the heat and stir in the mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and chopped cilantro. Mix until creamy and well combined.
Step 4: Assemble the Bowls
Divide the roasted sweet potatoes and taco-seasoned ground beef among your serving bowls. Add a generous scoop of the creamy street corn to each bowl.
Top with sliced or diced fresh avocado, then drizzle hot honey over everything. Finish with extra cotija cheese, cilantro, or a squeeze of fresh lime if desired.
Serve immediately and enjoy!

Tips for the Best Ground Beef Bowls
Cut the sweet potatoes evenly. Try to keep the cubes close to the same size so they roast evenly.
Don’t overcrowd the pan. Spread the sweet potatoes in a single layer to help them brown instead of steam. Use two pans if necessary.
Let the corn char. A little golden color adds extra flavor and makes the street corn taste even better.
Add the hot honey at the end. Drizzle it over the assembled bowls right before serving so you can taste the sweet heat in every bite.
Use ripe avocado. A perfectly ripe avocado adds creaminess that balances the spicy hot honey and savory taco-seasoned beef.
What to Serve with These Bowls
These bowls are filling enough to serve on their own, but you can also add a few extras if you’re feeding a hungry family.
- Cilantro-lime rice
- Black beans
- Tortilla chips and salsa
- Fresh pico de gallo
- Shredded lettuce
- Extra avocado or guacamole
You can also set out all the ingredients buffet-style and let everyone build their own bowl with their favorite toppings.
How to Store and Reheat
These sweet potato ground beef bowls are great for meal prep!
Store the cooked ground beef, roasted sweet potatoes, and street corn in separate airtight containers in the refrigerator for up to 4 days. Store the avocado separately and cut it fresh when you’re ready to eat.
Reheat the beef and sweet potatoes in the microwave or in a skillet until heated through. Add the street corn, fresh avocado, and hot honey after reheating.
For the best texture, I recommend adding the avocado and hot honey just before serving.
Frequently Asked Questions
Can I use ground turkey instead of ground beef?
Absolutely! Ground turkey or ground chicken works well in this recipe. Season it with taco seasoning just as you would the ground beef.
Can I make these bowls ahead of time?
Yes! Roast the sweet potatoes, cook the beef, and prepare the street corn ahead of time. Store everything separately, then assemble the bowls when you’re ready to eat.
What kind of hot honey should I use?
Use your favorite store-bought hot honey or homemade hot honey. Start with a small drizzle and add more to taste, depending on how much heat you like.
Can I use frozen corn?
Yes! Frozen corn works great. You can add it directly to a hot skillet and cook until heated through and lightly charred. If the corn releases excess moisture, let it cook a little longer so it can brown.
Can I add rice to these bowls?
Definitely! Rice is a great addition if you want to stretch the recipe or make the bowls even more filling.
