Copycat Mexican Fried Ice Cream Recipe

This is one of my favorite desserts! When it is paired with Mexican food it is even better in my opinion! It is the perfect Mexican food dessert recipe. I love that is pairs the familiarity of ice cream with a new twist. I hope you give this one a try and enjoy it as much as my family does!

How to make copycat Mexican fried ice cream

  1. Combine the margarine, coconut, Rice Krispies, brown sugar, and chopped pecans together in a bowl. Then press 1/2 of the mixture into a 9×13 inch pan.
  2. Scoop the vanilla ice cream on top. The best is using a square carton of ice cream and slicing it into 1/2 inch slices.
  3. Then press the rest of the Rice Krispie topping on top of the ice cream and store in the freezer for 12 hours.
  4. Top with strawberries and a drizzle of hot fudge.

Cook Time 12 hours
Total Time 12 hours 10 minutes

Ingredients

  • 1/2 cup melted margarine
  • 1 1/2 cup coconut
  • 2 1/2 cup Rice Krispies
  • 3/4 cup brown sugar
  • 1 cup chopped pecans
  • 1/2 gallon vanilla ice cream

Instructions

  1. Combine the margarine, coconut, Rice Krispies, brown sugar, and chopped pecans together in a bowl. Then press 1/2 of the mixture into a 9x13 inch pan.
  2. Scoop the vanilla ice cream on top. The best is using a square carton of ice cream and slicing it into 1/2 inch slices.

  • 2 1/2 cups Rice Krispie cereal
  • 3/4 cup brown sugar
  • 1 cup pecans choppes
  • 1/2 galloon vanilla ice cream

Instructions

  1. Combine the margarine, coconut, rice Krispies, brown sugar and chopped pecans together in a bowl

  2. Press 1/2 of the mixture into a 9x13 inch pan

  3. Scoop the cannel ice cream on top of the mixture, if you can find a square carton of ice cream the just slice it into 1/2 inch slices 

  4. Then press the rest of the Rice Krispie mixture on top of the ice cream and store in the freezer for 12 hours

  5. Top with strawberries and hot fudge drizzle
