Meal In A Pumpkin – A Family Tradition!

Holiday Favorite: Meal In A Pumpkin

Meal in a pumpkin is a tradition in my family! We have been eating it every Halloween for as long as I can remember. Now my children are eating it and I hope it is a tradition that starts in your own home and goes for generation to generation!

How to make Meal In A Pumpkin

  1. Grab the pumpkin and cut off the top and clean out the seeds and pulp then place on a cookie sheet.
  2. In a skillet add the oil and then the onions. Sauté for a few minutes and then add the ground beef and begin to cook. Cook until it is browned and then turn the heat too low.
  3. Add the soy sauce, brown sugar, drained mushrooms and cream of chicken and simmer for 10 minutes.
  4. While it simmers bring 1 1/2 cups water to boil and then add the minute rice stir, cover, and remove from heat. Let the rice sit while the other ingredients finish simmering.
  5. Then add the cooked rice and the water chestnuts (not drained) into the mixture and then spoon the mixture into the pumpkin.

  • medium size pumpkin
  • 2 Tablespoon oil
  • 1 onion, diced
  • 1 lb lean ground beef
  • 2 Tablespoons soy sauce
  • 2 Tablespoons brown sugar
  • 1 4 oz can sliced mushrooms, drained
  • 10 oz can cream of chicken
  • 1 1/2 cups water
  • 1 1/2 cups minute rice
  • 8 oz can water chestnuts, not drained
  • soy sauce, to garnish

Place the top on the pumpkin and place in an oven preheated to 350 for 45 minutes to 1 hour. Then remove from oven and serve. Top with soy sauce if you would like to add more!
