Chocolate Crinkle Cookies with Peppermint Frosting

If you are like me and just need everything peppermint during the holiday season then you are going to LOVE this peppermint frosting! These chocolate crinkle cookies are my absolute favorite because they are alway gooey in the middle and the perfect balance of chocolatey goodness. With the added peppermint frosting and candy cane toppings, it makes it even better in my opinion! Try this recipe and bring these to your next holiday party or cookie exchange! You can even use this frosting recipe on other cookies as well.

Peppermint Frosting Recipe

Peppermint Frosting Recipe

Total Time 5 minutes

Ingredients

  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter, softened
  • 4 cups powdered sugar 
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract

Instructions

  1. Combine frosting ingredients.
  2. Mix together until smooth to make the frosting.
  3. Frost the cookies.
  4. Top with crushed peppermints. 

Chocolate Crinkles Cookies Ingredients

  • 1 cup  flour
  • ½ cup cocoa
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 4 ounces unsweetened chocolate, chopped into small pieces
  • 4 tablespoons butter
  • ½ cup sugar
  • ½ cup powdered sugar

Peppermint Frosting Ingredients

  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter, softened
  • 4 cups powdered sugar 
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract

How to Make Chocolate Crinkle Cookes

  1. Preheat oven to 325 degrees F.
  2. Then line 2 baking sheets with parchment paper.
  3. Whisk together the flour, cocoa, baking powder, baking soda, and salt in a bowl.
  4. Whisk together the brown sugar, eggs and vanilla in a separate bowl.
  5. Then in a small bowl add the chopped unsweetened chocolate and butter and microwave for 30 second increments until the chocolate is melted. 
  6. Whisk the chocolate mixture into the egg mixture until mixed together. Then fold in the flour mixture.
  7. Let the dough sit at room temperature while the oven preheats.
  8. Place the regular sugar and powdered sugar in separate bowls.
  9. Grab a cookie scoop and scoop the cookie dough into balls, then drop dough balls in sugar and roll until fully coated.
  10. Then roll those balls into the powdered sugar until fully coated.
  11. Then put on a cookie sheet evenly spaced
  12. Bake the cookies, 1 sheet at a time, until puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone), about 12 minutes.
  13. Let cool completely before frosting. 
  14. While they are cooling combine frosting ingredients and mix together until smooth to make the frosting. Frost the cookies and then Top with crushed peppermints.

  2. Hello! Cookies are delicious. Dough is a little sticky where I live with humidity.. so be patient. They are worth it. The frosting ingredients are missing. So we will just eat them as is. Bummer!!
