Copycat Chipotle Chicken Burrito Bowl

 

 

 
Arizona is known for some pretty amazing Mexican food. The kind of Mexican food that is not always the healthiest. It usually contains a certain amount of grease but all in all it is still delicious. When I think about Chipotle I think about the healthy Mexican food that is is. This recipe is something yummy and a little lighter then the normal Mexican meal.

Copycat Chipotle Chicken Burrito Bowl

Ingredients

  • 7 ounce can chipotle peppers in adobo sauce
  • 2 tablespoons ancho chili pepper powder
  • Small red onion, coarsely chopped
  • 3 cloves of garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano, dried
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 cup canola oil
  • 5 pounds boneless skinless chicken thighs, trimmed

Instructions

    For Salad

    Chipotle chicken (recipe above)White or brown rice, cooked1 can black beans, drained and rinsed1 can corn, drainedRomaine lettuce, choppedTomatoes, dicedAvocado, pitted and slicedMonterey jack cheese, gratedSour cream

Chipotle chicken (recipe above)

White or brown rice, cooked

1 can black beans, drained and rinsed

1 can corn, drained

Romaine lettuce, chopped

Tomatoes, diced

Avocado, pitted and sliced

Monterey jack cheese, grated

Sour cream

7 ounce can chipotle peppers in adobo sauce
2 tablespoons ancho chili pepper powder
Small red onion, coarsely chopped
3 cloves of garlic
1 teaspoon cumin
1 teaspoon oregano, dried
1 tablespoon salt
1 teaspoon pepper
1/2 cup canola oil
5 pounds boneless skinless chicken thighs, trimmed
 
 

Strain adobo sauce into a small bowl. Throw away peppers or save for later for another recipe. Take 2 Tablespoons of liquid and place in food processor. Add ancho chili pepper powder, the onion, garlic, cumin, oregano, salt and pepper, and 2 Tablespoons canola oil. Grab a large freezer-safe plastic bag. Put about half of the chicken in the bag and pour half of the marinade on it. Mix around until chicken is coated in marinade and then add the other half of the chicken and remaining marinade. Let marinade in the fridge overnight.

Grab a cast iron skillet and pour in 2 Tablespoons canola oil. Grill the chicken for 10-15 minutes. Repeat steps until all chicken is cooked adding oil each time. Then chop chicken up and set aside.


For Salad
Chipotle chicken (recipe above)
White or brown rice, cooked
1 can black beans, drained and rinsed
1 can corn, drained
Romaine lettuce, chopped
Tomatoes, diced
Avocado, pitted and sliced
Monterey jack cheese, grated
Sour cream 
 
Start by placing a large spoonful of rice in a bowl, then a scoop of black beans and corn. Add your chipotle chicken. Top with diced tomatoes and avocado sliced. Sprinkle cheese and top with a dollop of sour cream.

  1. I’m confused at to what the directions are to make this. Link sends you to wayfair? I don’t see any directions there just shopping.
