The Perfect Fall Recipe: Butternut Squash Tortellini

How to make Butternut Squash Tortellini

  1. Start a pot of water to boil.
  2. Grab a skillet and cook the pieces of bacon and then set aside.
  3. Then to the same pan add the butternut squash cubes and saute for a few minutes. Add the tablespoon of butter if you would like!
  4. Cook the tortellini according to the directions on the back. Once they are cooked grab a slotted spoon with holes and scoop the pasta straight into the butternut squash. Stir until combined.
  5. Then add the pasta sauce and simmer for another 2 minutes.
  6. Top with the bacon, crumbled, craisins, chopped pecans and parmesan! Then serve!

Ingredients

  • 5 pieces of bacon
  • 16 oz butternut squash, cubed
  • 1 T butter
  • 19 oz cheese tortellini
  • 1 cup Alfredo
  • 1 cup Trader Joe's autumn pasta sauce, or another pumpkin or butternut squash sauce ( you can also do 2 cups of Alfredo if you would like and remove this sauce)
  • 1/3 cup craisins
  • 1/4 cup chopped pecans
  • 1/4 cup parmesan
