Grilled Chicken Salad with Candied Walnuts
My husband is a huge nut person. He loves any variation of nuts. About a year ago I tired Santé Nuts for the first time. My favorite thing about this company is that they offer a variety of nuts and candied nuts. I always love adding candied nuts to my salad. I feel like there is hardly any brands that offer candied nuts. When I run out of Santé Nuts I try to make my own and they are fine but they are never perfect. Some are too sweet, some get a little burnt, and some aren’t sweet enough. So with Santé Nuts candied nuts they are made to perfection! Perfect to snack on or to create recipes with! 3 boneless skinless chicken breasts (about 1 pound)
1 Tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups fresh baby spinach
2 stalks celery, sliced
1 apple, cubed
1/2 cup red grapes, halved
1 ripe avocado, peeled, pitted, and diced
1 package Santé Candied Walnuts
Apple Cider and Chive Dressing
2 Tablespoons low-fat mayonaise
2 Tablespoons apple cider vinegar
2 Tablespoons olive oil
1 teaspoon chopped fresh chives
1 teaspoon grainy mustard
1 teaspoon honey
1/4 teaspoon each salt and freshly ground pepper
Apple Cider and Chive Dressing: Whisk together mayonnaise,vinegar,oil, chives, mustard, honey, salt and pepper.
Preheat grill to medium-high heat; grease grate well. Toss the chicken with oil and season with salt and pepper; grill for 5 to 7 minutes per side or until grill-marked and cooked through. Let rest for 10 minutes; cut into bite-sized pieces.
Add chicken, spinach, celery, apple, grapes, and avocado to large bowl; toss with apple cider and chive dressing. Toss with walnuts.
