Cajun Chicken Pasta
Cajun Chicken Pasta
Ingredients
- 1 lb linguine
- 2 T butter
- 2 T olive oil
- 1 T cajun seasoning
- 2 chicken breasts, trim and sliced in half to make thinner
- 1 cup frozen onions, diced
- 1 T minced garlic
- 1 habenaro pepper, finely chopped, If you want it really spicy
- 1/2 pint heavy cream
- 1 14.5 oz can diced tomatoes
- 1/4 cup shaved parmesan
- garnishes, optional
- green onions, chopped
- parsley, chopped
Instructions
- Grab a pot of water and salt it. Then cook the linguine according to directions on the back.
- While the pasta is cooking grab a large skillet and add the butter and olive oil.
- Then take the chicken that has been cut in half and trimmed and season with the cajun seasoning. Then sear the chicken on both sides for about 2 minutes. Then remove the chicken from the pan.
- Then add the diced onions to the chicken's pan and saute for a few minutes. Then add the garlic and saute for a few more minutes. (If you want it really spicy add the diced habenaro here) Caramelize the onions and garlic for about 5 minutes total and then turn the heat down to low.
- Add in the heavy cream. Stir well and let cook for a few minutes and then add the can of diced tomatoes.
- Dice or slice the chicken and add it into the sauce and let cook for a few minutes.
- Then take the pasta straight from the water (do not drain) and add it right into the sauce. Toss the pasta in the sauce. Let cook for about 5 minutes.
- Then top with parmesan cheese and other garnishes and serve!
Cajun Chicken Pasta Recipe
This is a version of the Food Networks Bayou pasta recipe! It can be made spicier by adding peppers and more cajun seasoning or made not as spicy by just seasoning with salt and pepper.
