Sheet Pan BBQ Chicken with sweet potatoes and brussels sprouts

How to make Sheet Pan BBQ Chicken with sweet potatoes and brussels sprouts

  1. Place the chicken thighs in a bag or container and pour the bbq sauce on top. Let them marinate in the bbq sauce for at least 1 hour.
  2. Then when you are ready to eat preheat the oven to 425 degrees and then place the chicken thighs on the cookie sheet skin side up. Bake for 8 minutes and then remove from oven.
  3. Then place the sweet potato wedges on the pan drizzle with 2 Tablespoons olive oil and season with chili powder, salt and pepper. Toss until coated
  4. Then add the Brussel sprouts and drizzle with 2 Tablespoons olive oil and season with salt and pepper.
  5. Then place back in the oven and bake for about 25 minutes or until the chicken is cooked.

ingredients

2-3 lb chicken thighs

1 bottle bbq sauce

2-3 sweet potatoes, peeled and cut into wedges

1 lb brussels sprouts, cut in half

1/4 cup olive oil

1/2 teaspoon chili powder

salt and pepper
