🛒 Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken (thighs or breasts), cut into bite-sized pieces

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • ½ cup cornstarch

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp salt

  • ½ tsp black pepper

  • Oil for frying

For the Hot Honey Sauce:

  • ½ cup honey

  • 1–2 tbsp hot sauce

  • 1 tsp red pepper flakes

  • 1 tbsp butter

  • ½ tsp garlic powder

For the Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and cubed

  • 2 tbsp olive oil

  • ½ tsp paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

For the Bowl:

  • 2 cups cooked rice (or base of choice)

  • 1 avocado, sliced

  • 1 cup bell peppers, chopped

  • ½ cup diced tomatoes

  • ½ cup corn (optional but so good)

  • ¼ cup crumbled cotija cheese

  • Creamy sauce (ranch, chipotle mayo, or crema)


👩‍🍳 Instructions

1. Roast the Sweet Potatoes

Preheat oven to 425°F.

Toss sweet potatoes with olive oil and seasonings. Roast for 20–25 minutes, flipping halfway, until tender and slightly crispy.

2. Marinate the Chicken

Place chicken in buttermilk and let sit for at least 30 minutes (or overnight for best flavor).

3. Coat & Fry

Mix flour, cornstarch, and seasonings.

Dredge chicken and fry in 350°F oil for 5–7 minutes until golden and crispy. Set aside on paper towels.

4. Make the Hot Honey

In a small saucepan, combine honey, hot sauce, red pepper flakes, butter, and garlic powder. Warm until smooth.

5. Toss the Chicken

Coat the crispy chicken in the hot honey sauce until glossy and sticky.

6. Build Your Bowl

Start with rice, then layer sweet potatoes, chicken, avocado, peppers, tomatoes, and corn.

7. Finish It Off
