Gingerbread Cookies Recipe

Do you have a tradition of making gingerbread cookies for the holiday? This recipe is super easy. The dough can be made ahead and they are absolutely delicious!

Gingerbread cookies are a MUST this time of year and I love decorating them cute for the holidays. I’m always getting compliments on these cookies when I bring them to cookie exchanges. This recipe makes perfectly moist gingerbread boys and I end up eating half the batch! Try it out!

Gingerbread Cookies Recipe

Gingerbread Cookies Recipe
Do you have a tradition of making gingerbread cookies for the holiday? This recipe is super easy. The dough can be made ahead and they are absolutely delicious! 
Prep Time 2 hours
Cook Time 10 minutes
Total Time 2 hours 10 minutes

Ingredients

  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 2/3 cup molasses
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/4 cup flour
  • 1 Tablespoon ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • parchment paper
  • Royal Icing:
  • 2 egg whites
  • 4 cups powdered sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • Food coloring-optional

Instructions

  1. In a bowl add the butter, brown sugar and molasses. Beat until fluffy.Then add egg and vanilla and mix again.
  2. Then in a bowl add the flour, spices, baking soda and salt. Mix. Then gradually add the dry ingredients to the wet ingredients.  
  3. Split the dough in half and then wrap in plastic and chill for 2-3 hours.
  4. Then roll out the dough in-between 2 pieces of parchment paper. about 1/4 inch thick. Then chill again until firm. 
  5. Preheat oven to 350degrees F. Place a slice of parchment paper on the 2 cookie sheets. Then place the chilled dough on a lightly floured surface and then cut out the gingerbread with a 3" cutter and then place on the lined cookie sheets. 
  6. Bake for 9-10 minutes and then let cool for 5 minutes on the cookie sheets before placing them on the racks to cool
  7. Then decorate with icing and sprinkles if you want.

Royal Icing:

Mix all ingredients on low for 7 minutes. If the mixture is too thick add water a teaspoon at a time until it is a smooth paste consistency. Then you can add food coloring or divide is small bowls and add different colors to each bowl.
