Cook Time 7 minutes
Total Time 47 minutes

Ingredients

  • 3 chicken breasts, cut into 1 inch cubes ( you can add more chicken if you are feeding more adults)
  • 1 tsp cornstarch
  • Panda express Kung Pao Marinade
  • 8 whole chili peppers
  • 1 T oil
  • 1 red bell pepper, chopped into 1 inch cubes
  • 1 zucchini, chopped into small chunks
  • Scallions
  • ½ cup unsalted peanuts or cashews

Instructions

  1. Toss the chicken into a bowl with the cornstarch until the chicken is all the way coated. Then dump ½ of the bottle or kung pao marinade and place over chicken. Marinate for 30 minutes or up until overnight.
  2. Once your chicken is done marinating heat up your wok or skillet. Add the whole pepper and dry cook for a couple minutes. Turning often to get all sides. The chillies will turn a darker color. Keep a close eye on them so that they don’t burn. Remove from the pan.
  3. Then add the oil to the pan. Add the chicken and fry for about 6-8 minutes. Or until the chicken is cooked all the way through. Add the bell peppers, zucchini, and scallions. Cook for about 5 minutes over medium heat. The veggies should be cooked but still have a little crunch to them!
  4. Add the remaining marinade and the chillies that were cooked earlier. Cook for another 2 minutes or until the sauce begins to thicken.
  5. Top with the peanuts or cashews and serve with rice.
