The Ultimate Cinco De Mayo Food

It’s Cinco de Mayo food time, and being an Arizona native eating Mexican food and tacos starts practically from birth!

 

The perfect meal always starts with a salsa and dip bar! Here are a few of my very favorite salsas to make, eat and serve!

 

Sweet Green Salsa 

I can eat an entire bag of chips with this sweet green salsa and it is perfect to add to your Cinco de Mayo food list! It is so simple to make sometimes the canned tomatillos can be harder to find. So I stock up on Amazon to always have a can or two on hand!

 

Guacamole 

My favorite guacamole is topped with pomegranate seeds! A local restaurant here serves it that way and my husband and I are suckers for it!

 

Peach Mango Salsa

The best combination to enjoy for your Cinco de Mayo feast! This recipe is perfect for the summer and have tons of flavor!

Peach Mango Salsa

Ingredients:

  • 3 peaches, diced
  • 1 mango, diced
  • 1/2 jalapeno, completely cleaned out (or not if you like it spicy)
  • 1/3 purple onion, thinly diced
  • 3 Tablespoons cilantro, chopped
  • Juice of 1/2 lime

 

Combine all ingredients and enjoy!

 

Cowboy Caviar 

This is a perfect summertime dish! The sweet corn adds the perfect crisp bite and is absolutely delicious! Here is also my favorite chopper to make it even easier to make!

Queso cooked different ways

Microwave

I had a queso similar to this in Texas when I was visiting my sister! The hot sauce and avocado right on top makes this microwave queso taste amazing.

Crockpot

This crockpot queso has cream cheese, green chilies, and olives in it that add extra flavor and takes this queso up a notch!

 

This recipe is how you jazz up store bought queso! Dump that queso in, add some meat and salsa, cook for a few hours so the flavors blend together and serve!

Authentic Mexican Rice 

Ditch the bagged or boxed Mexican rice and whip up this recipe! It will be the perfect addition to your tacos or burritos or whatever dish you like!

No need to run off to Taco Bell to order your favorite crunch wraps! Layer the center of your tortilla with meat, nacho cheese, and lots of yummy toppings! Fold on it and cook!

These are my kids favorite! No need to buy those nasty frozen taquitos in the freezer section anymore! These with blow all those out of the water! Perfect way to use up leftover Sunday roast meat as well

 

Red Chile Burritos 

I grew up eating green Chile burritos all the time, here is a new twist using red enchilada sauce instead! This is also my go-to meal to feed a crowd! So whether you like green or red sauce I have recipes for both!

This is a family favorite and a dish that my mom makes often at Sunday dinner! It does take some time to set up in the freezer to get the ice cream hard again but it is absolutely worth it!
