Is there any better food combo than tomato basil soup with a warm grilled cheese sandwich? I certainly don’t think so! Learn how to make this soup from scratch to enjoy on cold nights!

While I believe tomato and grilled cheese are a foolproof combination, soups and sandwiches have been served together since forever! Looking for a different mix of the two to try? Here are my favorite recipes for both:

Tomato basil soup and grilled cheese is totally a rainy day meal to me! Since I live in Arizona, rainy days are few and far between. But when we do get some showers, I almost always use it as an excuse to whip up this easy, delicious tomato and basil soup. As a bonus, this recipe is very kid-friendly, so it’s a hit with my whole family!

And what tomato soup is complete without grilled cheese?! While I’ll never turn down a grilled cheese, I have to say that this one goes above and beyond. The tomato soup warms you up from the inside, and the grilled cheese is the perfect dipper. What more could you want from a rainy day meal?

Easy Recipe for Tomato Basil Soup

Ingredients

  • 5 tomatoes, peeled, seeded and diced
  • 4 cups tomato juice
  • 14 fresh basil leaves
  • 1 Tablespoon sugar
  • 1 teaspoon oregano
  • 1/2 cup butter
  • 1 cup heavy cream
  • salt and pepper

Instructions

  1. Place tomatoes and juice in a large pot over medium heat. Simmer for 30 minutes.
  2. Next, add in the sugar and oregano. Sit well.
  3. Then, puree the tomato mixture along with the basil leaves, and return the puree to the pot.
  4. Place the pot over medium and add the butter. Stir until the butter is melted.
  5. Finally, slowly add in the heavy cream. Season with salt and pepper. Do not boil.
  6. Let your soup slowly simmer and move on to making your grilled cheese!
 

What Will I Need To Complete This Recipe?

The ingredients of this recipe are straightforward. For the soup, you’ll need: tomatoes, tomato juice, fresh basil leaves, sugar, oregano, butter, heavy cream, and salt and pepper. 

I like to get the soup started, then move onto the grilled cheese while it simmers. For the sandwiches you’ll need three simple ingredients: your choice of bread, garlic & herb butter, and dubliner cheese.

How Do I Make The Grilled Cheese?

Preheat oven to 350 degrees F. Grab your favorite bread and generously butter it. Grab a cast iron skillet and place on a medium heat stovetop. Lay one piece of bread butter side down in your hot pan. Let the garlic butter sizzle and top your bread with shredded Kerrygold cheese. Lay down your other piece of bread butter side up and press the sandwich down with your spatula. But don’t press down too hard. Check to see if your side is golden brown or whatever color you would like it to be and flip everything over. Press it down with your spatula and cook until the bottom slice looks like the top slice. Once you are happy with the color, finish it off in the oven on a baking sheet. Let bake for about 5 minutes or until all the cheese is melted. Take out of the oven and slice and enjoy!

Grilled Cheese Instructions
