30 Minute Chicken Noodle Soup Recipe

No matter the season, there is nothing quite like a warm bowl of soup. Everyone knows and loves a classic chicken noodle soup and for good reason! I’ve made this dish into a simple recipe that everyone in the family can enjoy, check it out!

Chicken noodle soup is the perfect example of comfort food that tastes like home in every bite. Every time I make this classic soup, my soul lights up and I feel like a kid again. While some soups are just as good bought from the store, chicken noodle soup MUST be made from scratch for that extra bit of homemade love. I’ve tried many delicious takes on this dish, but this recipe I’m sharing is one my mother has made for years. It has become an absolute family favorite and I can’t wait for you to try it out!

 

30 Minute Chicken Noodle Soup {Kid-Friendly!}

30 Minute Chicken Noodle Soup Recipe

Ingredients

  • 3 Tablespoons olive oil
  • 1 cup carrots, peeled and thinly slice (about 2 carrots)
  • 1 cup celery, thinly sliced (about 2 stalks)
  • 1 medium yellow onion, diced
  • 2 Tablespoons minced garlic
  • 64 ounces chicken broth
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon pepper
  • 12 ounces wide egg noodles
  • 2 cups shredded rotisserie chicken
  • 2 Tablespoons fresh parsley finely chopped
  • 2 Tablespoons lemon juice
  • 2 teaspoons salt

Instructions

    1. In a large stock pot over medium heat add the olive oil.
    2. Then the carrots, celery, and onion. Cook for about 5 minutes until they start to soften.
    3. Add the minced garlic and saute for a minute or two.
    4. Add the chicken broth and bring to a boil.
    5. Add the spices and boil for 5 minutes.
    6. Then add the egg noodles and boil for 10 minutes. If you like your soup to have more liquid you can add some water.
    7. Then add the chicken, parsley, lemon juice, and salt and boil for 2 minutes.
    8. Serve immediately with a buttery roll!

This recipe is all about adding in the vegetables and spices you love to add flavor. You’ll need vegetables (carrots, celery, and onions), chicken broth, spices (bay leaves, thyme, oregano, parsley, salt and pepper), egg noodles, shredded chicken, olive oil, and lemon juice.

How To Store Your Soup

Store in an airtight container in the fridge for 4-5 days. If you’re interested in freezing it, wait for the soup to completely cool. Then, place in a freezer-safe container for 2-3 months.
