Loaded Berry and Feta Spinach Salad

 
Last week I ate this salad for 3 days straight. Some of those days I had it for lunch and dinner. I was obsessed with it and was sad when everything was gone and I couldn’t throw this salad together! The colors of the entire salad just made me feel happy too! I love when I am eating bright color foods that it makes me in a better happier mood for some reason! Please tell me I am not the only one! Also have fresh healthier ingredients always seems to help too!
 

 

When taking pictures of meals that I make it is much easier to get a picture with a recipe like this! The bright vibrant colors of the fruits and veggies just pop. I hope that this recipe makes you feel as happy as it did to me and that you want to eat it 3 days straight like I did!
 
 
Now lets start with the ingredients! Start with a bed of spinach leaves then throw in some feta cheese
 
 
Some sliced purple onion

 

 

Walnuts, I like to candy mine to add some extra crunch and sweetness too
 
Slice some strawberries up

 

 
Then add some blueberries

 

 
Then some raspberries

 

 
 Next a secret ingredient that I don’t normally use in my salads..Kiwi!
 
Toss all together with this creamy poppyseed dressing and you have yourself one yummy salad!

Loaded Berry and Feta Spinach Salad

Ingredients

  • 3/4 cup Stonyfield Greek Yogurt
  • 1/2 cup white vinegar
  • 1/2 cup honey
  • 1 teaspoon ground mustard
  • 2 teaspoon grated onion
  • 1 teaspoon salt
  • 1 heaping Tablespoon poppyseeds

Instructions

      1. Start with a bed of spinach leaves then throw in some feta cheese, sliced purple onion, walnuts, blueberries, strawberries and raspberries and kiwi.
      2. Dressing: In a blender or a jar combined all ingredients and shake up!
Creamy Poppyseed Dressing

3/4 cup Stonyfield Greek Yogurt
1/2 cup white vinegar
1/2 cup honey
1 teaspoon ground mustard
2 teaspoon grated onion
1 teaspoon salt
1 heaping Tablespoon poppyseeds
