Loaded Chopped BBQ Pulled Pork Salad

Layers and layers of yummy toppings in this bbq pulled pork salad. From pulled pork, cilantro, tomatoes, corn, black beans, cucumbers, onions, and topped with fried jalapeño and fried onions.

This is one of my families favorite salads. Whether it is to bring to a bbq, a family gathering, or just enjoying together around the dinner table it is a winner! If you love bbq this is the perfect recipe to follow for a healthy afternoon or dinner meal. This recipe can also be super versatile and with all of the different flavors it is always delicious! Try out this dish after a night of bbq and use your extra pulled pork to put in a salad. Leftovers can always be used to make all kinds of meals and nobody would ever even know the difference.

  5. Then drizzle the dressing when you are ready to serve

Perfect Summertime Salad

This salad is perfect for any summer gathering! It is such a versatile salad and can be used with whatever you have in the pantry or fridge.

It is a great salad to bring to baby showers, family gatherings, picnics, or bbq’s. I also love all the different colors you can through in with the bbq pulled pork to make it perfect for showing off to your friends and family. They will be so impressed with your creativity when you show them your masterpiece!

 

How to make BBQ Ranch Dressing

I like to mix together 1:3 ratio of bbq sauce to ranch. So if I do 1 cup of ranch dressing I add 1/3 cup of bbq sauce. This seems to be the perfect amount to put in my salad but it is super easy to make more if you need it!

How to serve Chopped BBQ pulled pork salad?

You can serve it how it is in the photos or you can mix it all together! My husband always likes to evenly placed the ingredients instead of doing them in sections like I do!

You can also do a salad or baked potato bar with these toppings.

Can you make this ahead of time?

Absolutely! I like to use left over pulled pork for this! Then you can prep the ingredients and chop them so you have them in your fridge ready to go when you are ready to serve.

You can also use these as a meal prep and eat throughout the week. Store the ingredients chopped and ready in airtight containers and then each day assemble your salad and you have a yummy salad in minutes!

  • 3 heads romaine lettuce, chopped
  • 1-2 cups pulled pork, cooked
  • 1/2 bunch cilantro, trimmed and chopped
  • 15 oz can of corn, drained and rinsed
  • 15 oz can black beans, drained and rinsed
  • 3 English cucumbers, sliced thinly
  • 1/2 container cherry tomatoes, cut in half
  • 1/3 red onion, diced into small squares
  • 1/2 cup fried jalapeños
  • 1/2 cup fried onions
  • 1 cup ranch dressing
  • 1/3 cup bbq sauce
