Mexican Cobb Salad

Mexican Chopped salads are super easy to throw together and can be made for lunch or dinner. Adding Grilled chicken to make this a Grilled Chicken Mexican Chopped Salad makes this salad or dense and can be easy done.
Personally this salad is hearty enough without grilled chicken in my opinion. But if you want it to be more similar to the el pollo loco salad add it away!
This salad is perfectly topped with a creamy cilantro dressing to make it even more amazing! Hope you like it as much as I do!
Mexican Cobb Salad
Ingredients
Romaine lettuce, chopped
Avocado, sliced
Jack Cheese, Shredded
Tomatoes, diced
Fire Roasted Corn, drain and rinse
Black Beans, drain and rinse
Red Onion, Diced
Crunchy Tortilla Strips
Dressing Ingredients
Ranch Packet, traditional not buttermilk
1 cup buttermilk
1 cup mayonnaise
2 tomatillos, husked and diced
1/2 bunch cilantro
1 lime, juice
1 clove garlic, minced
1 jalepano, de-seeded
Instructions
Salad: Lay down a bed of lettuce and top with remaining toppings then top with dressing.
Dressing: Place all ingredients in a blender then pulse until smooth.
Mexican Chopped Salad
Ingredients
- Romaine lettuce chopped
- avocado sliced
- jack cheese shredded
- tomatoes
- 1 15 oz can of fire roasted corn drained and rinsed
- 1 15 oz can of black beans drained and rinsed
- red onion diced
- crunchy tortilla strips
Dressing
- 1 packet ranch dressing, tradtional not buttermilk
- 1 cup buttermilk
- 1 cup mayonaise
- 2 tomatillos husked and diced
- 1/2 bunch cilantro
- 1 lime juiced
- 1 clove of garlic minced
- 1 jalepano de-seeded
Instructions
Salad
