Street Corn Pasta Salad with Avocado

Street corn pasta salad is simple and delicious, full of pasta, corn, tomatoes, avocado and a delicious salsa dressing. The perfect summer pasta salad that everyone needs to try!

If you love pasta salad then you will LOVE street corn pasta salad. Loaded with lots of avocado and other yummy ingredients it makes for the perfect summer salad to make for the entire family. This salad is super refreshing and easy to make for a lunch or dinner. Be prepared for some amazing leftovers! Try out this recipe on the next hot day and I promise it will become a new house favorite.

Street Corn Pasta Salad with Avocado

Street Corn Pasta Salad with Avocado
Prep Time 2 hours
Total Time 2 hours

Ingredients

  • 16 oz rotini pasta 
  • 4 ears of corn grilled and shaved off 
  • 15 oz can black beans
  • 1 bell pepper chopped
  • 1/2 red onion finely diced 
  • 1/2 bunch cilantro finely chopped 
  • 1 container grape tomatoes
  • 1 cup La Victoria salsa
  • 1 cup sour cream
  • 1/4 cup Mayo 
  • 2 t garlic salt
  • 1 t pepper
  • 1 t cumin 
  • 1 lime juiced
  • Green onions to garnish 
  • 2 avocados to garnish 
  • Cotija cheese to garnish

Instructions

  1. Cook pasta and drain. Set aside to cool while you prep everything else.
  2. In a large bowl add the grilled corn, black beans, onion, cilantro and grape tomatoes. 
  3. Whisk together the sour cream, Mayo, salsa, garlic salt, pepper, cumin, and lime juice. 
  4. Add the pasta to the large bowl and toss and then top with salsa dressing. 
  5. Place in the fridge for about 2 hours. Then right before you serve top with avocado, green onions and Cotija cheese.
