Creamy Spinach Artichoke Dip

This is the best spinach dip! It is filled with artichoke hearts, sour cream, pepper jack cheese, mayo, parmesan cheese and spinach! It will forever be your go-to when you need to bring an appetizer to a gathering or when you are hosting a party.

Why is spinach dip the best appetizer?

Spinach and artichoke dip is my absolute favorite. I will go to certain restaurants just for their dip even if I don’t care for their main dishes as much. It beats any dip out there for me…which is dangerous.  This dip was no exception! Creamy and delicious! So when I received a large box full of food should taste good chips I whipped up some of this dip and sat down and ate it all! haha I know I am pathetic. Then of course I had to be the taster fork all the bags of chips they sent me and boy they are good! Totally live up to their name! The kettle corn were a perfect pair for this dip but my favorite were the salt and vinegar sweet potato chips never tasted anything like it and boy they were yummy.
 

How to make Spinach and Artichoke Dip

  1. Preheat: preheat the oven to 350 degrees and get your 9×13 casserole dish ready
  2. Heat: heat the spinach in the microwave
  3. Drain: drain the artichoke hearts
  4. Mix: mix together all the ingredients except the pepper jack cheese
  5. Bake: place all ingredients in a casserole dish and top with cheese and bake

Can spinach and artichoke dip be made ahead of time

Yes you can make this dip ahead of time and have it in the casserole all ready to bake when you are ready

Can you make spinach artichoke dip in the crockpot

Yes you can make this in a crockpot, just spray it and then load the ingredients like you were putting them in the casserole dish and then cook on low for 2-3 hours. Then right before you serve top with the cheese.

What to serve with spinach and artichoke dip

I personally love to serve it with tortilla chops and baguettes. You can also serve it with crackers, slices of bread, pretzel chips or veggies like cucumbers or carrots.

Ingredients

  • 1 10-ounce package frozen chopped spinach
  • 2 13.5-ounce cans artichoke hearts
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup grated pepper jack cheese
  • 1 cup freshly grated Parmesan cheese

Instructions

    1. Preheat oven to 350 degrees F. Grease a 9×13 casserole dish with nonstick spray.
    2. Heat the spinach in the microwave oven on high for 5 minutes and squeeze dry.
    3. Drain the artichoke hearts and coarsely chop in a food processor.
    4. Combine all the ingredients except the jack cheese in a large bowl. Stir well.
    5. Transfer into the prepared casserole dish and sprinkle with jack cheese on top.
    6. Bake for 30 minutes.
    7. Top with a dollop of sour cream and serve with chips!

  • 1 cup parmesan cheese grated
