Wintertime Spinach Salad with poppyseed dressing
4 cutie oranges
1 pomegranate or a container of the seeds
1 avocado, cubed
1 cup raspberries
½ cup almonds
½ cup walnuts
¼ cup sugar
In a small skillet add the nuts and the sugar. Cook on low while stirring until the sugar crystalizes onto the nuts and you have sugared nuts. Then immediately remove nuts from skillet onto a plate to cool.
Then grab the spinach, cutie orange slices, pomegranate seeds, diced avocado, and goat cheese and make a salad.
Top with cooled sugared nuts and then serve with poppyseed dressing!
