Banana Bread Overnight Oats – Easy Protein-Packed Breakfast

Banana Bread Overnight Oats

If you love banana bread, you are going to LOVE these Banana Bread Overnight Oats! 🍌

They have all the cozy flavors of banana bread—ripe banana, cinnamon, brown sugar, and vanilla—but turn them into an easy, creamy breakfast you can prep the night before.

I use a Snickerdoodle-flavored protein powder, which adds the perfect cinnamon-sugar flavor, but you can absolutely use your favorite protein powder. Then, in the morning, I add a big scoop of Greek yogurt, fresh banana, and a little granola for the perfect creamy-and-crunchy finish.

This is one of those breakfasts that feels like a treat but is so easy to make. Mix everything together at night, pop it in the fridge, and breakfast is ready when you wake up!

Why You’ll Love These Banana Bread Overnight Oats

  • Easy to make: Everything goes into one jar or container.

  • Make-ahead breakfast: Prep it the night before for an easy morning.

  • Protein-packed: Protein powder, chia seeds, and Greek yogurt add protein and staying power.

  • Tastes like banana bread: Cinnamon, brown sugar, vanilla, and banana create that classic banana bread flavor.

  • The toppings make it: Fresh banana, creamy Greek yogurt, and crunchy granola take these oats to the next level.

Ingredients

For the Overnight Oats

  • ½ banana

  • ½ cup rolled oats

  • 1 tablespoon chia seeds

  • ½ scoop protein powder

  • 1 teaspoon vanilla

  • 1 tablespoon brown sugar

  • 1–2 teaspoons cinnamon

  • ½ cup milk

For Serving

  • Large scoop of Greek yogurt

  • Fresh banana, sliced

  • A little granola

  • Extra cinnamon, optional

What Protein Powder Should I Use?

I used Snickerdoodle-flavored protein powder, and it was delicious! The cinnamon-sugar flavor works perfectly with the banana and brown sugar.

But you don’t have to use Snickerdoodle. Vanilla, cinnamon, or your favorite protein powder will work great too.

How to Make Banana Bread Overnight Oats

Step 1: Mash the Banana

Add ½ of a banana to a jar, bowl, or container and mash it with a fork.

Step 2: Add the Ingredients

Add the rolled oats, chia seeds, protein powder, vanilla, brown sugar, cinnamon, and milk.

Step 3: Stir

Mix everything together really well until all of the ingredients are combined and the oats and chia seeds are evenly distributed.

Step 4: Refrigerate

Cover and place in the refrigerator overnight, or for at least 4–6 hours. The oats and chia seeds will absorb the milk while they chill, creating a creamy, thick consistency.

Step 5: Add the Toppings

In the morning, give the oats a good stir. Add a large scoop of Greek yogurt, then top with fresh sliced banana and a little granola.

I also love adding an extra sprinkle of cinnamon!

The creamy Greek yogurt, banana bread-flavored oats, fresh banana, and crunchy granola make the perfect breakfast combination.

Tips for the Best Overnight Oats

Use a ripe banana. A ripe banana gives the oats more natural sweetness and a stronger banana flavor.

Don’t skip the cinnamon. Cinnamon is what really gives these their banana bread flavor. Start with 1 teaspoon and add more if you love cinnamon.

Adjust the consistency. If your oats are too thick in the morning, simply stir in a splash of milk until they reach the consistency you like.

Add toppings right before eating. Adding the Greek yogurt, banana, and granola in the morning keeps everything fresh and gives you that delicious crunchy texture from the granola.

Make a few at once. These are perfect for meal prep! Make multiple jars so you have breakfast ready to grab on busy mornings.

Topping Ideas

While Greek yogurt, banana, and granola are my favorite toppings, you could also add:

  • Chopped walnuts

  • Chopped pecans

  • Peanut butter

  • Almond butter

  • A drizzle of honey

  • Extra cinnamon

  • Mini chocolate chips

  • A little maple syrup
