How to Make Cowboy Caviar!

Cowboy Caviar or Corn Salsa is not your traditional salsa! It has so many dimensions and is absolutely addicting! You will love it!

 

How to make Cowboy Caviar

  1. In a bowl combine the corn, black-eyed peas, avocados, cilantro and green onion. Mix together.
  2. In a separate bowl add all remaining ingredients.
  3. Mix well together, then pour the mixture over the corn mixture.
  4. Mix well and serve!

Ingredients

  • 1 15-oz can of corn, drained
  • 1 15-oz can black-eyed peas, drained
  • 2 avocados, peeled and diced
  • 1/2 bunch of cilantro, chopped
  • 2 green onions, chopped
  • 3 to 4 roma tomatoes, diced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 Tablespoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon cumin

Instructions
