Chicken Tinga Street Tacos

Ingredients

  • 2 Tablespoons olive oil
  • 1/2 medium onion, diced
  • 2 Tablespoons minced garlic
  • 2 spoonfuls of Chipotle Peppers in Adobo Sauce
  • 1 Tablespoon cumin
  • 1 Tablespoon oregano
  • 1 14.5 oz can fire roasted diced tomatoes
  • 1 cup chicken broth (you can add more if you want it to be thinner)
  • 1 teaspoon onion powder
  • 1 Tablespoon chili powder or Trader Joes Chile Lime Seasoning blend
  • 3 cups cooked chicken, shredded
  • street taco tortillas, cooked

Instructions

    1. In a saucepan or skillet add the olive oil and onions. Sauté the onions for a few minutes then add the garlic and saute for a few more minutes.
    2. Then add the remaining ingredients.
    3. Bring to a simmering cook for about 7 minutes.
    4. Then dump the sauce into a blender, blend until smooth.
    5. Then place the shredded chicken into the pan where you were making the sauce and pour the sauce from the blender over the chicken. Mix together well.
    6. Then serve on top of street taco tortillas and top with your favorite taco toppings such as cilantro, diced onion, lime, tomatoes, cotija cheese, etc.

How to make chicken street tacos

  1. In a saucepan or skillet add the olive oil and onions. Sauté the onions for a few minutes then add the garlic and saute for a few more minutes.
  2. Then add the remaining ingredients.
  3. Bring to a simmering cook for about 7 minutes.
  4. Then dump the sauce into a blender, blend until smooth.
  5. Then place the shredded chicken into the pan where you were making the sauce and pour the sauce from the blender over the chicken. Mix together well.
  6. Then serve on top of street taco tortillas and top with your favorite taco toppings such as cilantro, diced onion, lime, tomatoes, cotija cheese, etc.

Then dump the sauce into a blender. (If your sauce is too thick you can add more chicken stock) And blend until smooth.

Then place the shredded chicken into the pan where you were making the sauce and pour the sauce from the blender over the chicken. Mix together well.

Then serve on top of street taco tortillas and top with your favorite taco toppings such as cilantro, diced onion, lime, tomatoes, cotija cheese, etc.
